grits may be usedinstead of noodles. KIDNEY BEANS WITH CORN Serves 6 2 tablespoonfuls of oil or bacon fat 1 medium-sized onion, chopped 1 green pepper, chopped1/2 teaspoonful of salt 1 can of kidney beans 1 can of whole kernel corn1/4 cupful of grated cheese Heat fat in frying pan, add choppedonion and green pepper, and fry untilonion is soft and a light brown. Addthe salt, the beans with their juice, andthe corn, and mix well. Pour into a cas-serole and sprinkle with grated cheese.Bake in a moderate oven (350°) untilheated through, or about 30 minutes.It is not necessary to cook canned foodsvery long to develop their flavor, as isthe case with raw foods. And for the last word, no matterwhat food is being prepared, it is wellto butter the casserole thoroughly, notbecause the food requires it, but becauseit makes dishwashing easier, and mostof us are interested in that point.
