Fromage Blanc. foodwishes.blogspot.com/2008/06/you-dont-have-to-be-chees… I’ve been really loving Cowgirl Creamery’s fromage blanc, both with and without herbs, and heard it was low in fat. So I started searching around, not really believing it, and discovered that fromage blanc is lower in fat than most cheeses, but is not lowfat unless it’s made that way. Most places, including Cowgirl Creamery, make it with whole milk. So I started searching around for recipes, wondering if I could make it and make it lower in fat. I eventually came across the above video tutorial on how to make fromage blanc and he made it look really easy. I decided to give it a try. This is my first attempt, made with whole milk. We’re going to a brunch tomorrow, to which I am taking some home-cured salmon to go with it, so I can share the full fat stuff instead of eating it all myself. I’ll try the lowfat stuff later this weekend. After heating up the milk, you add buttermilk and lemon and the milk curdles. That’s what this stage is.
