Our well emulsified dressing…
We prepared a vinaigrette of Colavita-brand balsamic (inexpensive and good), Berio-brand olive oil (not our first choice for a dressing, but what was on hand), Roland-brand grain Dijon mustard (awesome), and a few additional seasonings. This was whisked until perfectly emulified.
