Beet and whatnot frittata
Quick recipe: Soften some vegetables in butter (or reheat some leftover veg). Preheat oven to 425F. Whisk up about 2 eggs and a teaspoon of creme fraiche per person. Pour the eggs over the softened vegetables. Grate some cheese on top and put the pan in the hot oven. Once it’s started to set turn on the broiler. It’s done when it’s set and golden brown.

Pro tip: If you use a stainless pan or other non-non-stick pan this will probably stick. Do not panic. Just let it rest in the pan for about a minute before trying to free it – the moisture from the frittata will loosen things up and it should slide right out. As a bonus, this gives any uncooked egg under the crust a chance to set up.
